Sisig has been a staple food in every Filipino carinderias and restaurants because of its variety of meat like chicken or fish, onions, and chili served in a sizzling platter with egg. Just add some drips of calamansi and it’s already a perfect meal for lunch.
The well-loved dish went through a series of food innovation throughout the time, creating variations like chicken sisig, tuna sisig, and more.
But did you know that it has also won the taste buds of international celebrities like the world-renowned chef Anthony Bourdain.
He predicted before in an interview with the CNN Philippines that sisig will eventually dominate the world.
“I think it’s the most likely to convince people abroad who have had no exposure to Filipino food to maybe look further and investigate further beyond sisig. I think that’s the one that’s gonna hook them,” Bourdain said in the interview.
Currently, there is a Filipino-themed restaurant in New York City named Maharlika that serves a few Filipino cuisines, including sisig.
Maharlika has been offering Filipino cuisines with some few innovations that would attract New Yorkers to try and take a bite of their food. Their sisig, for example, is recommended to be served with a mimosa.
Sisig could be the gateway to other Filipino dish in cuisines and it is slowly on its way to get familiarized to the world.
