The original recipe of La Paz Batchoy hails all the way from its namesake – the district of La Paz in the province of Iloilo. The word attached to the delicious dish, ‘Batchoy’ then comes from the Chinese word ‘Bac Qui’, which means small pieces of meat. While some consider it as a variant of the Chinese noodle soup, Ilonggos have since perfected their very own recipe of the La Paz Batchoy.
