In the fast-paced, high-pressure kitchens of Dubai, Filipino chef Bryan William Lim Gonzales has made a name for himself through grit, passion, and the warmth that defines Filipino hospitality.
Currently serving as Chef de Partie at Deatox, part of the Tapestry Collection by Hilton at West Palm Beach, Gonzales’ career reflects the resilience of Overseas Filipino Workers (OFWs) pursuing their dreams abroad.
Born in Lipa City, Batangas, Gonzales moved to Dubai in July 2001. Despite nearly two decades in the UAE, he returned to the Philippines to study Culinary Arts at De La Salle Lipa, grounding his craft in Filipino culinary traditions.
“One of the things I found difficult to leave behind [after vacations] was the culture, such as Fiestas and the food,” he said. “These elements continue to influence my perspective on cooking.”
For Gonzales, cooking is more than a profession, it is a performance that requires discipline and teamwork. Early mornings are spent inspecting ingredients to ensure quality, while the rush of service transforms the kitchen into a high-pressure environment.

He said the most rewarding moments come from collaborating with colleagues and preparing signature dishes, like steak and eggs, that keep guests returning.
His journey, however, has not been without obstacles. Like many in hospitality, Gonzales faced setbacks during the COVID-19 pandemic, when his first property could not absorb him.
He credited Filipino traits such as willpower, grit, and joy as his “secret weapons” in overcoming challenges, eventually finding a kitchen that allowed him to grow professionally.
Outside work, Gonzales maintains balance through exercise and leisure. Morning runs at Kite Beach, late-night visits to Deira’s Night Market, video games, and listening to his partner’s music project, “The Cyche,” help him unwind after long shifts.
To fellow Filipinos working abroad, Gonzales offered advice rooted in patience and self-pride: “Remember why you began. The days can be long, and being away from home is never easy, but every sacrifice you make has a meaning. Stay connected to your roots, take care of your well-being, and celebrate your progress.”
As he continues to craft culinary experiences, Bryan William Lim Gonzales stands as a testament to Filipino resilience, proving that dedication and heart can make any kitchen feel like home.
