Pinoy atchara is one of world’s best salsa

Taste Atlas, a food encyclopedia, has rated atsara or the Filipino green papaya pickled salad as one of the best in the world, Good News Pilipinas reported.

The dish is described as regular fare best served with Filipino dishes.

“The heated marinade, which combines vinegar, sugar, ginger, garlic, salt, and peppercorns, is poured over the vegetables, and the relish is pickled until all the flavors develop,” Trade Atlas aid.

“With its crispy texture and a refreshing combination of sweet, sour, and spicy flavors, atchara is the perfect complement to heavier Filipino dishes such as fried beef, sausages, or grilled chicken,” it added.

Varieties of the dish are carrots, onions, daikon radish, and bell peppers or chili peppers, sometimes served with pineapple chunks or sweet raisins.
